Saignée de Sorbée is a rose champagne with a cult-like following. As far as I can tell, this wine has so many fans not because Saignée has the most delicious flavor profile you will ever taste, but rather because it has perhaps the most unexpected flavor profile you will ever taste. I took my inspiration for this drawing both from tasting notes and from its name, which roughly means “the blood of Sorbée,” (Sorbée being the location in which it is grown). Ruddy, earthy, and wild, this champagne has closer ties to the soil than most; it seemed to me that Saignée was not merely a representation of terroir, but something that captured the pulse of Sorbée.
